Fried oysters are a staple on the table for family gatherings, and they always disappear fast—especially when they're seasoned just right and fried up to perfection.

Paired with a hot sauce and fresh lemon, these fried oysters are sure to become a key element in your kitchen. Let’s dive into this quick and simple recipe for a taste of coastal comfort right at home!

Ingredients

  • 15-30 fresh oysters (shucked or unshucked)

  • 1 cup all-purpose flour (for coating)

  • 1 cup cornmeal (for crispiness)

  • salt

  • black pepper

  • paprika 

  • garlic powder 

  • adobo

  • 2 large eggs (beaten)

  • 1/4 cup buttermilk

  • vegetable oil (for frying, such as canola or peanut oil)

  • parsley (delicate garnish)

  • lemon wedges (for serving)

  • hot sauce (optional, for serving)


**Everyone's palate is different, so season "to taste" and add more or less as desired for the perfect balance of flavor!**


Preparation

Step 1 - Prepare the oysters:

  • Shuck the oysters and rinse the shells under cold water to remove any dirt, sand, or debris. Drain them well on paper towels to remove excess moisture. Pat them dry gently to avoid splashing when frying.


Step 2 - Make the breading:

  • In a shallow bowl, combine the flour, cornmeal, garlic powder, adobo, paprika, salt, and pepper. Mix well.

  • In another shallow bowl, whisk together the eggs and buttermilk.


Step 3 - Coat the oysters:

  • Dip each oyster first into the flour mixture, ensuring it’s fully coated, then dip it into the egg mixture, and coat it again with the flour-cornmeal mixture. Press lightly to ensure an even coating.


Step 4 - Fry the oysters:

  • In a deep skillet or large frying pan, heat about 2 inches of vegetable oil over medium-high heat until it reaches 375°F (190°C). You can check the oil temperature with a thermometer or drop a small bit of breading into the oil – if it sizzles and floats immediately, the oil is ready.

  • Fry the oysters in batches (don’t overcrowd the pan) for 2-3 minutes on each side, until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain excess oil.


Serve:

  • Serve the fried oysters hot with lemon wedges on the side. Garnish with parsley. You can also serve with hot sauce or cocktail sauce if desired.
