About the Recipe

Warm, comforting, and packed with flavor, curry udon noodles are a perfect dish for any time of year. This fusion curry noodle bowl combines hearty udon noodles with a rich, fragrant curry sauce. It’s easy to make and incredibly satisfying—whether you're craving something spicy, savory, or simply comforting. This dish brings together the best of both worlds.

Ingredients

  • For the curry sauce:

    • drizzle of vegetable oil

    • 1/4 cup of butter, to thicken

    • white onion, finely chopped

    • lots of fresh garlic, minced

    • cumin

    • garam marsala

    • curry paste (adjust to taste)

    • 1 tablespoon soy sauce

    • 1 cup heavy whipping cream

    • salt and pepper


    **Everyone's palate is different, so season "to taste" and add more or less as desired for the perfect balance of flavor!**


  • For the udon:

    • 2 packs of fresh or pre-cooked udon noodles


  • Toppings (optional, but recommended):

    • 2 soft boiled eggs, halved

    • chopped green onions

    • shaved carrots

    • tuxedo sesame seeds

    • vegetables of choice (I paired mine with broccoli seasoned with soy sauce & oyster sauce)

    • chili flakes (if you like it spicy)

Preparation

Step 1 - Cook the Udon Noodles:

  • Fresh: Bring a large pot of water to a boil. Add the udon noodles and cook according to the package instructions. Drain and set aside.

  • Pre-cooked: Add during Step 2 while sauce is simmering.


Step 2 - Prepare the Curry Broth:

  • In a large saucepan, heat the vegetable oil over medium heat. Add the diced onion and sauté for 4-5 minutes, until softened and lightly caramelized.

  • Add the garlic, cooking for another minute until fragrant.

  • Stir in the curry paste, soy sauce, garam marsala, cumin, and cook for 1-2 minutes to bring out the flavors.

  • Pour in the heavy whipping cream and butter. Stir well to combine and bring to a simmer.

  • Adjust the seasoning with salt and pepper. Let the sauce simmer gently for 10 minutes to allow the flavors to meld. Add and gently toss your noodles to separate them.


Step 3 - Assemble the Dish:

  • Divide the cooked udon noodles into bowls.

  • Top with your choice of toppings—soft boiled egg halves, chopped green onions, tuxedo sesame seeds, sautéed vegetables, and a sprinkle of chili flakes for heat.


Serve:

  • Serve the curry udon hot and enjoy the rich, comforting flavors in every bite!
